Processing
The grapes are tipped into the 'pulper' that strips the grapes
from the stalks and pulps them ready for the press
The pulp is piped into the pneumatic press
which is 'charged' and the juice extracted
The juice is then piped into stainless steel vats where the fermentation process
takes place
Checking the juice's specific gravity (level of sugars).
